Mexican-Inspired Fruit Salad





1/3 cup chopped apples

2 tsp chopped dried chia seeds (or 1 tsp ground flax seeds)

4 tbsp chopped dates (or 3 tbsp shredded dried raisins)

1/4 cup chopped walnut halves

2 cups chopped fresh spinach (or 2 cups frozen)

1 large avocado (freshly chopped, seeded and cubed)

1 tsp lime juice

Pinch salt & pepper

Pair with the following: 4-5 cups fresh or frozen broccoli sprouts
Salsa, sour cream, guacamole, etc. Instructions In a pan over medium heat, add apples, chias seeds, dates, walnut halves, spinach, avocado, salt & pepper, and stir until heated through. Let cool, and refrigerate, and use as a dip for chips. For the Pair: Chop all the vegetables, and put them in a large bowl. Add the juice from 1 lime, and a bit of salt & pepper to the vegetables, and mix together well. Add chopped nuts. Fold all the ingredients together. If you like your salsa thick, add 1 tsp of the lemon juice, and let it sit for about 10 minutes before serving.
