1 cup chopped celery

1 cup chopped onion

2 cloves garlic (crushed)

3 tablespoons oil

½ cup finely chopped celery


3 ½ teaspoons salt


2 cups chopped cilantro Instructions Preheat oven to 350 degrees degrees F or 180 degrees C. Wash well and dry beans. Toss with a tablespoon of lemon juice, add some freshly ground pepper and cook for about 20 minutes, until a little soft and tender. While beans are roasting, combine 2 cups chopped onion, 2 clove garlic and 3 teaspoons oil in a bowl. Stir to combine and season with salt and cilantro.
